Both plurals are correct and they are not interchangeable. Fish is the plural for multiple individuals of one kind: there are six fish in the tank. Fishes is the plural of kinds, used in biology and by anyone counting species: the fishes of the Great Barrier Reef. That distinction is why the phrase sleeping with the fishes sounds odd to a biologist and perfectly normal to everyone else. The verb muddies it further. He fishes on Sundays is an ordinary third person singular and has nothing to do with either plural.
